Cross Butchers' sizzling success

A Kilsyth butcher's shop has been adjudged the best in the west when it comes to making beef sausages.

The Cross Butchers won the West of Scotland Beef Sausage Championship in a recent competition organised by Scottish Craft Butchers.

It followed an evaluation of beefburgers, speciality burgers and cured bacon at Forth Valley College in Stirling.

The shop also tasted success in the burger awards, winning gold for its brazil and peppercorn burger and silver for its lamb feta burger.

The West of Scotland Beef Sausage Championship was judged at Scottish Craft Butchers’ regional meeting in the Garfield House Hotel, Stepps.

The award was accepted by manager John Fleming, who said: “We only use local produce and the beef sausages are made to our own recipe, adding a little extra ingredient.

“We also use natural skins because it adds a bit more flavour. Our customers expect a quality product.”

The Cross Butchers now goes forward to the five-region final - judged by mystery shopper - to decide the Scottish Beef Sausage Champion.

John is proud that none of the shop’s butcher meat is processed, being sourced from regional farms and markets around North Lanarkshire and in Shotts and Wishaw.

Paul Boyle, president of Scottish Craft Butchers, said: “These evaluations always reveal really appealing products that craft butchers make and sell.

“It is always worth going the extra mile for something extra special.”
